What I Ate Wednesday: Honolulu

I started my day yesterday with a big iced coffee with stevia and almond milk. Lately I’ve been so tired, but I don’t know why; maybe it has to do with being on a new schedule, or perhaps it’s just my body readjusting to the weather in Hawaii.

About an hour later, after some errands, I made a smoothie with (right to left) nettle leaf tea, tart cherry juice, lemon juice, acai powder and green super food powder (not pictured: ice).

The smoothie tasted good but it didn’t look pretty, and it actually had the consistency of juice.

Recently I ordered prickly pear extract with aloe, on Amazon. You take just a drop a couple of times a day. Prickly pear is a cactus that can lower blood glucose by decreasing the absorption of sugar in the stomach and intestine. Some researchers think that it might also decrease cholesterol levels, prevent hangovers, and kill viruses in the body. It also tastes good!

Kiyo made us Ling Ling chicken and vegetable potstickers that he bought at Costco. I made him read me the ingredients before I decided to have any, and I was shocked and excited that there are no questionable ingredients in these!

Fage mango soursop yogurt

Around lunchtime I had a Fage Greek yogurt, with mango and guanabana (soursop). I like this flavor a lot, but I don’t understand the point of these yogurts that separate the fruit from the yogurt.

After studying for the GRE for a few hours (so boring!) and running some errands, Kiyo and I made sandwiches with foccacia bread from Safeway. We used a goat cheese spread I’d made with cottage cheese, Greek yogurt and herbs. We topped the goat cheese spread with local grape tomatoes and salami; the sandwiches were simple but super tasty.

I got called in to substitute teach an evening yoga class; afterwards I had a bit of homemade apple kombucha that Kiyo made. I’ll have to get him to share that process with you soon!

leftover beets and beetgreens

For dinner we had leftovers. The night before I’d roasted beets from our Ma’o Organic Farms box with Tahitian limes (also from the farm box), olive oil, Maui onion salt and pepper. I sautéed the beet greens with olive oil, rice vinegar, capers, salt and pepper. My mom saved some gyro meat from the Greek festival this summer, so we just pulled some strips out of the freezer and heated it up with the vegetables. I had a small hunk of bread on the side. It was a great dinner!

After dinner I worked on my barbel routine; squats, bench press and bent-over row with 25 pounds (each 3 sets, 8 reps). It doesn’t sound like much, but for me it’s really hard! Dessert was semi-sweet chocolate chips, straight out of the HUGE Costco bag we have in our freezer.
